RedFish Pacifica Reserve Red Wine is an innovative blend produced from the Paso Robles Viticulture Area. The cool Pacific Ocean waters that are only 30 miles away from the vineyards influence the grapes we select for RedFish Pacifica. However, a steep mountain range serves as a barrier between the grapes and the ocean. What happens next is awe-inspiring. Each evening the air-stream that only moments before helped form the ocean’s waves is impeded by steep mountains. The mountains abruptly halt and force the airstream several thousand feet up into a cooling atmosphere. By the time it reaches the peaks of the mountains, the air’s moisture is consolidated and becomes so heavy that it comes rolling down the other side as a cool dense fog chilling grapes that only a few hours before bathed in the hot arid summer sun. These topographic features and geologic conditions combined with our innovative vinification techniques on the Burgundy and Bordeaux varietals that help make RedFish Pacifica Reserve an incredible delight when paired with seafood.
